{"id":2065,"date":"2020-12-12T10:24:58","date_gmt":"2020-12-12T15:24:58","guid":{"rendered":"https:\/\/crossfieldcollection.com\/recipe\/?p=2065"},"modified":"2020-12-12T10:31:15","modified_gmt":"2020-12-12T15:31:15","slug":"raspberry-lemon-thumbprint-cookies","status":"publish","type":"post","link":"https:\/\/crossfieldcollection.com\/recipe\/raspberry-lemon-thumbprint-cookies\/","title":{"rendered":"Raspberry Lemon Thumbprint Cookies"},"content":{"rendered":"<p><span class=\"style-scope yt-formatted-string\" dir=\"auto\"><strong>RASPBERRY LEMON THUMBPRINT COOKIES<\/strong><br \/>\nMAKES 4 DOZEN COOKIES<br \/>\n1\/2 cup raspberry jam or jelly<br \/>\n1 tablespoon raspberry liqueur, such as Chambord<br \/>\n2 1\/4 cups all-purpose flour, plus more for forming<br \/>\n1 teaspoon baking powder<br \/>\n1\/4 teaspoon salt<br \/>\n2 sticks (1 cup) butter, at room temperature<br \/>\n2\/3 cup sugar<br \/>\n2 large egg yolks<br \/>\n1 tablespoon finely grated lemon zest<br \/>\n1 tablespoon fresh lemon juice<br \/>\n1 teaspoon pure vanilla extract<\/span><\/p>\n<p><span class=\"style-scope yt-formatted-string\" dir=\"auto\"><br \/>\nPreheat the oven to 350 degrees F. Line two rimmed baking sheets with parchment paper.<br \/>\nIn a small bowl, stir to combine jam and Chambord; set aside.<br \/>\nIn a medium bowl, whisk to combine flour, baking powder, and salt.<br \/>\nIn the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar until light and creamy. Add egg yolks, one at a time, along with the lemon zest, lemon juice and vanilla and beat until combined.<br \/>\nAdd the flour mixture, in 2 additions, and beat just until moist clumps form.<br \/>\nRemove dough from the bowl and gather with your hands to form a ball.<br \/>\nPinch off small pieces of dough and roll to form 1-inch balls.<br \/>\nPlace on prepared baking sheets, about 1 inch apart.<br \/>\nDip your index finger in flour and press into a ball of dough to form an indentation in the center of each ball.
