Keuka Slaw for Asian Salad

1 envelope of Good Seasons Italian Dressing Mix
1/2 cup sugar
2 tablespoons soy sauce
2 packages of coleslaw blend (cabbage salad mix – 16 ounce each)
4 green onions, sliced
1/2 cup dry roasted sunflower kernels
1/2 cup sliced almonds, toasted

Prepare dressing mix in dressing in shaker or small bowl as directed on envelope (water, vinegar, oil, dry mix ). Stir in sugar and soy sauce.

BREAK apart Noodles, place in large bowl. Discard ramen seasoning packets or reserve for another use.
Add coleslaw mix and  blend, onions, sunflower kernels and nuts to noodles, mix lightly.

Add dressing: toss to coat.

The ramen noodles will soften as it stays in the liquid mix.

Makes 12 servings of 1 cup each.

Prep time is 15 minutes.

Tomato Salsa – Presto Canner Booklet

TOMATO SALSA

7 quarts peeled, cored, chopped paste or plum tomatoes*
5 cups chopped onion
4 cups seeded, chopped long green chiles
½ cup seeded, finely chopped jalapeño peppers
6 cloves garlic, finely chopped
2 cups bottled lemon or lime juice
2 tablespoons salt
1 tablespoon black pepper
Optional ingredients:
3 tablespoons dried oregano
2 tablespoons ground cumin
2 tablespoons fresh cilantro

*This recipe works best with paste tomatoes, such as Roma. Slicing tomatoes, such as Plum or Beefsteak, require a much longer
initial cooking time to achieve a desirable consistency.

CAUTION! Wear plastic or rubber gloves and do not touch your face while handling or cutting hot peppers. If you do not
wear gloves, wash hands thoroughly with soap and water before touching your face or eyes.
The jalapeño peppers do not need to be peeled. The skin of the long green chiles may be tough. If you choose to peel
chiles, wash and dry them and then slit each pepper along the side to allow steam to escape. Blister skins by placing
peppers in a hot oven (400°F) or under a broiler for 6 to 8 minutes until skins blister. After blistering skins, place peppers
in a pan and cover with a damp cloth. Cool several minutes; peel off skins. Discard seeds and chop.

Wash tomatoes and dip in boiling water for 30 to 60 seconds or until skins split. Dip in cold water, slip off skins, and
remove cores.

Combine all ingredients except oregano, cumin, and cilantro in a large pot and bring to a boil, stirring frequently, then reduce heat and simmer 10 minutes.
Add oregano, cumin, and cilantro, if desired, and simmer for another 20 minutes, stirring occasionally.

Ladle hot salsa into hot jars, leaving ½-inch headspace. Remove air bubbles. Prepare jar rims. Adjust two-piece lids.
Process pints 15 minutes.
Yield: About 16 to 18 pints

This recipe is from the Presto Pressure Canning Booklet.  My traditional Salsa recipe is from Cornell and is handwritten on an index card and has been written so that it can make a half a batch or a full batch. This recipe is the approved method for making salsa that has peppers and onions and should not have the quantities changed for safety in canning low-acid foods.

Southern Style Green Beans

During the cooking process, they soak up an amazing amount of flavor from bacon grease, chicken broth, seasoned salt, and garlic powder. I start by cooking some diced bacon in a large pot. I then set the bacon aside, but leave all the grease in the pan. You can leave the bacon in the pot to cook with the beans, but it will get a soggy texture. But the up side is the beans will have even more bacon flavor. Most times I add the cooked bacon back once I’ve drained the beans, but sometimes I just leave it in the pot for the cooking process.

Many times a ham hock is used instead of bacon, or in addition to bacon.

You want to cook Southern-Style Green Beans for at least an hour, preferably closer to 2 hours. You want them to get really soft, but not mushy, so that they are melt in your mouth tender. Just before serving, you can mix in a tablespoon or so of butter to give the green beans a buttery coating.

INGREDIENTS

4 slices bacon,, diced
2 pounds green beans ends snapped off and longer beans snapped in half
2 cups chicken broth
2 cups water
1 teaspoon seasoned salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon red pepper flakes
1 tablespoon butter, optional

Brown and crisp bacon in a large pot. Remove bacon from pot and reserve.
Add green beans to pot along with all remaining ingredients, except butter.
Bring to a boil and then turn heat to medium-low. Cover and simmer for 1-2 hours, stirring occasionally.
Drain beans and add butter if using. Check beans for seasoning and add extra salt and pepper to taste. I like lots of black pepper. Sprinkle with bacon and toss to distribute the bacon and butter.

Baked Beans – Jack Rabbit Recipe

Conventional Cooking Instructions

Quick Soak – Rinse and sort beans in a large pot. To one pound of beans (2 cups) add 6 to 8 cups hot water. Bring to a rapid boil, boil for 2 minutes. Remove from heat. Cover and let stand for one hour. Drain soak water and rinse beans.
Overnight Soak – Rinse and sort beans in a large pot. To 1 pound of beans (2 cups) add 6 to 8 cups cold water. Let stand overnight or at least 6 to 8 hours. Drain soak water and rinse beans.

Cooking Instructions – Add 6 cups hot water to drained and rinsed beans.  Simmer gently with cover lid titled until desired tenderness is reached, about 1 1/2 to 2 hours.

Whole Berry Cranberry Sauce

Ingredients:

1 cup sugar
1 cup water
1 12-ounce package Ocean Spray® Fresh or Frozen Cranberries, rinsed and drained

Directions:

Combine water and sugar in a medium saucepan. Bring to boil; add cranberries, return to boil. Reduce heat and boil gently for 10 minutes, stirring occasionally. Cover and cool completely at room temperature. Refrigerate until serving time.

Makes 2 1/4 cups.
